Pre-cooling is being done by
washing the horticultural produce in the
running water with a view to reduce the
atmospheric heat.
The fresh horticultural produce
consumes oxygen for respiration and releases
carbon dioxide and ethylene. The ethylene
further enhances ripening. Since
reducing oxygen and increasing carbon dioxide
can increase the shelf life, we
have decided to combine refrigeration to
reduce respiration and delays yellowing
and quality changes. Since, the trials are
to be carried only in the open spaces of
the marketing yard, it was decided to conduct
trials with dry ice to start with.
Individual Quick Freezing (IQF)
of fruits & vegetable is catching on
in India now targetting the Processed Food
Industry and Export market. Using Liquid
Co2 for IQF requirement provides
better quality of products and faster freezing
time and thus offering better value addition.
